My favourite homemade ice cream (dairy-free + vegan + SO easy!)

When you eat a lot of something, you want to make sure you’re consuming the best quality whole food ingredients possible.

And ice cream is one of those foods that I’m sure will always be a staple in my diet. I could eat this at any time of the day… in the middle of winter, during a snowstorm, for breakfast, lunch or dinner. I can’t really think of a season or time of day when ice cream would not be appealing 🙂

Being both an ice cream fanatic and health coach has led to me seeking out a) healthier versions of ice cream without all the additives and b) ice cream that’s made without processed sugar.

It’s a lot harder to find than you’d think!

As is usually the case, the best stuff comes from what you put together in your own kitchen, like this dairy-free version of ice cream made from frozen bananas.

I lOVE that this ice cream is made up of just fruit (how cool is that?!), it utilizes only natural fruit sugar and it takes all of one minute to make!

It also looks and tastes like real ice cream!!

I do have an ice cream maker which I really love but for those days when I feel like going dairy-free or want something super quick and simple, this is my go-to ice cream recipe.

**Note — this recipe requires the use of a food processor** It could maybe work in a blender… I’ve never tried it but could be possible if you have a powerful one.

spotted bananas

Ingredients:

+ 2-3 frozen ripe bananas (make sure before freezing that your bananas are very spotted — the sign that they are ripe. This recipe will not work with unripe bananas!)

+ Optional: generous dash of cinnamon

+ Optional: 1 spoonful nut butter (almond butter is great and so is sunflower butter)

Additions:
For chocolate ice cream, add raw cacao powder. For vanilla, add half of a vanilla bean or vanilla extract. For mint ice cream, add fresh mint leaves.

What to do:

Chop the frozen bananas into smaller chunks. Add all ingredients to a food processor and whiz until thoroughly blended to the consistency of ice cream (about 30 seconds). The longer you blend, the more whipped and “soft-serve-like” the ice cream will become. For hard ice cream, blend for less time.

That’s it! Scoop into a bowl and you have amazing dairy-free ice cream that you can add all your fave toppings to! I like to top with crispy walnuts, shredded coconut, goji berries, raisins, chocolate chips or cacao nibs.
